Thai-Style Fried Not-Rice (Grain-free, Gluten-free)

If you, like I, set strange challenges for yourself like to eat vegetables for three meals a day as often as possible, you will adore this recipe. It's a flavor- and color-packed way to start a day, but of course would make a terrific lunch or dinner. In my mind it exists in the realm of fried rice, but without the rice, so the focus stays on all of those lovely vegetables. (That said, feel free to add rice!)

Do you cook with coconut oil? It's so delicious, and so good for you, you'll find yourself reaching for it again and again when sauteeing vegetables or making breakfast treats like pancakes. I love that it adds a Thai-inspired fragrance for zero effort - build on that with Thai curry paste, fish sauce, fresh lime, and basil and you'll have a pan full of magic in just a few minutes. Assuming that CSA boxes and farmers markets will not be bereft of produce all season long, this is a terrific dish for plowing through a load of vegetables - mix and match with whatever is showing up.

If you don't eat eggs, you could easily make this dish vegan by substituting soft tofu for the eggs. Scramble away! If you aren't vegan and have leftover chicken or pork or steak from dinner the night before, add it! And certainly substitute whatever nuts you like best. Very adaptable.

Grain-free Gluten-free "Bread"

I saw a recipe for this bread on the terrific blog Against All Grain. As I've noted before, I find eating even gluten-free grains inflammatory (and with a bigger carbohydrate punch than I can get away with, unless I want to gain weight and feel exhausted...). You could call this way of eating Paleo, but I do fear that people have come to believe that a Paleo style of eating means gnawing on huge amounts of bacon, which isn't true at all. Paleo really just refers to eating the whole, unprocessed foods that humans evolved healthfully to eat for most of our existence - greens, roots, nuts, fruits, eggs, and free-range animals. Grains, sugar, and dairy are avoided (some people tolerate dairy better than others, although it's worth noting that when one gives it up for a month and then reintroduces it, it's common to notice low energy and congestion and perhaps even stomach cramps). I do eat legumes in small quantities (per my quinoa cake recipe below). Healthy, naturally occurring fats - olive oil, coconut oil, avocados, grassfed animal fat, nuts/nut oils (not vegetable oils/margarines or transfats) - are not limited but in fact make up the primary source of calories. (Even though I try not to eat loads of cheese, I do still eat butter and ghee/clarified butter).

I find it an incredibly delicious and satisfying way to eat and it has certainly done wonders for my health. Eating carbohydrates in the form of vegetables, nuts, and small amounts of fruit (particularly fresh berries) instead of processed grains and sugars is the path to appetite control, glowing skin, and steady energy.

I'll take all of those, straight up, thank you.

That's a long introduction for how I came to make this bread! So here it is: I follow Against All Grain on Facebook so when Danielle (the blog's lovely author, with a compelling story of how she manages ulceritive colitis with a grain-free diet) posted photos of a grain-free bread that looked like BREAD I had to give it a go. The bread is primarily raw cashew butter, eggs, and a bit of coconut flour. I'm tempted to call this a cake - a pound cake in particular - more than a bread, but I must say that it makes AMAZING French toast, the way that challah or brioche does. I could easily imagine adding citrus zest to the mix or icing a warm loaf with the cinnamon butter glaze from Roost blog's (another terrific grain-free site) pumpkin donut recipe. Needless to say, I think this is a clever recipe that can be adapted any number of sweet or savory ways. That makes it a winner in my book! (Find Danielle's recipe here.)

I made the French toast pictured with eggs and hemp seed milk and topped it with crushed blackberries (quite terrific right now) sweetened with a bit of maple syrup, courtesy of my friend Kathy Yerich's maple trees. My belly is pleasantly full of grain-free French toast, it's going to be more than 70 degrees today, and I'm off to judge a butchering competition at Whole Foods Lake Calhoun.

Perfect Soft-Boiled Eggs

When I was a little girl, I thought I'd really be a grown-up when I could eat soft-boiled eggs for breakfast, just like my dad. I was fascinated by the way he carefully tapped the top off with a knife, then sprinkled salt & pepper inside before scooping spoonfuls onto bites of seriously buttery toast (we are a buttery family). I only liked the whites of eggs at that stage of my life, so I was too apprehensive to tackle a whole egg for myself, but the elegance of it all definitely motivated me to learn to like the yolks, too.

And oh have I learned, ha! If you cut me open I'd bleed egg yolks at this point in my life. I kind of forgot about soft-boiled eggs for awhile, lured by the sexiness of poached (it feels very impressive when you first learn to poach an egg, even though it's the easiest thing in the world), but they are very much back in my rotation, especially during tomato season. It's hard to imagine a more humbly glorious breakfast than slices of perfectly ripe tomato, hot buttered toast, and a soft-boiled egg or two. The addition of smoked pork (ham or bacon) would be lovely but not necessary.

Fried Cheese with Almond Meal Crust (Gluten-Free)

So I had fried cheese for both breakfast and dinner today.

I am ridiculously obsessed with the stuff right now, to such a degree that I kind of embarrassed myself a couple of weeks ago raving about the gluten-free fried cheese curds at Red Stag in NE Minneapolis to Ryan Petz of Fulton Beer. When we ended our conversation with plans for a group brunch, he wryly suggested that maybe we'd best head to Red Stag to assuage my fried cheese craving.

So that's exactly what we did! And the crispy, salty little treats were so good that I ordered a few more rounds while at Red Stag again this past week with a group of the girls.

Apparently my years at the University of Wisconsin taught me well that There is Never Enough Fried Cheese. And that Beer is Food, although that's a different post.

But since I can't very well go running off to Red Stag every time I have a craving for fried cheese, and because tasty cheese curds aren't completely easy to obtain, I created the version pictured with slices of fresh mozzarella coated with egg and almond flour. The trick for cheese contained within - not exploding out of - a golden crust is to freeze it for a bit before frying.

Serve the melty, golden loveliness with marinara sauce and lots of basil for an almost-summer treat.

Fried Cheese with Almond Meal Crust (Gluten-Free)
Makes 4-6 slices

1 ball of fresh mozzarella, sliced into 4-6 slices, a bit less than 1/2-inch thick
2 c. almond meal
1 tsp. salt
1 large egg, lightly beaten in a flat bowl
olive oil for frying
warm marinara sauce & fresh basil for serving

Line a large plate with parchment paper.

Combine almond meal and salt on a large plate. Dip one slice of cheese in the beaten egg, then dredge the cheese slice in the almond meal mixture. Lay the cheese slice on the parchment paper. Do the same with the remaining cheese slices.

Put the uncovered plate of cheese in the freezer for 30 minutes.

Add 1/4-inch deep olive oil to a medium skillet and heat over medium-high heat. When the oil is hot, fry the cold cheese slices a couple at a time, until golden brown on both sides. Transfer slices to a paper towel-lined plate and fry the rest of the cheese. Serve cheese hot with warm marinara sauce & fresh basil.

Celery Root Latkes

Given that everything is better fried - everything - it will come as no surpirse that root vegetables make utterly dreamy latkes. I like celery root in particular for its slightly sweet flavor.

These latkes are delicious as is, fresh out of the fat with a dab of sour cream, but my favorite way to eat them is topped with a poached egg. I know: Everything is Better Fried and Just Put an Egg On It, two of my favorite food credos, together in the same post? Out of control.

This same technique works nicely with zucchini as well. I particularly like a mix of zucchini and green pepper, in the summer when both are abundant, topped with Greek yogurt and scallions. Or a fresh tomato sauce. Or ooh, with Molly Herrmann's tomato jam! So lovely. We'll have to wait a few more months to play around with all that fun, however.

For now, fry your root vegetables and be very happy.

Thai Omelet in Coconut Curry Broth

My son Nathan and I spent our summer Sundays eating our way through Kingfield Farmers Market. We did it last summer too and got in such a fun groove of eating together, visiting with friends, and stocking up on all of our favorite treats for the week.

It's worth noting that it was a much less expensive endeavor last year, when Nathan was around my height and was satisifed with a Chef Shack hot dog. Uh, not this year, not at 6'4" and counting, when he still ate a Chef Shack hot dog, but added their soft-shell crab sandwich, mini-donuts, and Arnie Palmer; Gai Gai Thai curry; Cafe Palmira iced coffee; Foxy Falafel curry falafel with a load of perfect pickles, extra hummus to go; Sun Street Bakery turnovers and sourdough loaf; and Bogart Loves maple-bacon donuts.

I scored plenty of bites, of course, and a good portion of it all we brought home to share with John...but I'm telling you, Sunday became a day for feasting.

So damn cool.

One of my favorites toward the end of the season was Gai Gai's Thai omelet served in a curry broth. On a chilly morning, perhaps after being out too late the night before, that crispy omelet in creamy coconut broth tasted spicy-sublime.

I was out too late last night, in fact - hey! - and could think of nothing but that omelet around lunchtime today. So I made up a fast one, nowhere near the beauty of Kris' lovely coconut curries, but flavorful enough to feed the beast. I made one for John for dinner. His conclusion: I'm dying.

Thai Omelet in Coconut Curry Broth
Inspired by Gai Gai Thai
Serves 4

1 can coconut milk
2 Tbsp. Thai green curry paste
1/2 c. chicken broth
2 Tbsp. + 4 tsp. Thai fish sauce
2 Tbsp. brown sugar
handful of finely chopped vegetables, optional (I had cabbage and mushrooms on hand)
juice of 1/2 lime
4 eggs
2 Tbsp. chopped scallions
2 Tbsp. chopped cilantro or basil
4 Tbsp. peanut oil

more chopped scallions & herbs for garnish
hot rice (optional)

Open the can of coconut milk and spoon some of the fat off into a medium saucepan set over medium heat. When the fat is hot, stir in the Thai curry paste and fry for 2-3 minutes. Stir in the rest of the can of coconut milk, chicken broth, 2 Tbsp. of the fish sauce, brown sugar, and vegetables. Simmer until vegetables are tender, about 5 minutes. Stir in lime juice. Set aside and keep warm.

In a medium bowl, beat eggs with 4 tsp. of fish sauce, scallions, and cilantro. Set a small nonstick skillet over medium-high heat and add 1 Tbsp. of oil. When the oil is very hot, add 1/2 c. of the egg mixture to the pan. Swirl the egg around in the pan and when the edges start to brown, which will be pretty quickly, use a spatula to fold the omelet in half and then in half again. Cook for a few more minutes then transfer to a bowl. Ladle some broth over the top.

Repeat the process with the remaining egg mixture. Serve hot, with rice if desired, topped with more chopped herbs.

Chicken Soup with Kale, Garlic & Sweet Potatoes

My mom is recovering from major surgery here at our home. She spent the first couple of weeks in a hospital and rehab facility, where the food was...truly awful. I brought her little farmer's market treats like sliced tomatoes and strawberries, to remind her that not all food comes from boxes and cans, but man, the overall effect of feeding healing people crap food is seriously depressing.

She is glad to be here now, noshing what appeals from my endless stream of cooking, and starting to cook for herself again too. She can't eat more than a few bites of anything at a time - and all she's truly hungry for is sweets, ha - but she made herself a killer BLT yesterday, thick with a perfect tomato and a pile of freshly picked lettuce, and managed to eat half of it.

Baby steps on the road to recovery.

She also managed a few bites of this soup, which really hit the spot on a cool, fall day. I love chicken soup for its endless versatility, and of course for its soothing, healing deliciousness. I studded this version with kale, sweet potatoes, garlic, and just a spot of bacon because my mom loves bacon.

I am of her, after all.

This is a nice transitional soup, warm on a cool day, but full of end-of-summer bounty like a garden-ripe tomato. A hint of nutmeg is lovely here, as is a shower of freshly grated Parmesan to finish.

Chicken Soup with Kale, Garlic & Sweet Potatoes
Serves 6

1 roasting chicken, about 3 lbs., patted dry
1 Tbsp. bacon fat or vegetable oil
2 yellow onions, 1 coarsely chopped, 1 diced
6 cloves garlic, 3 smashed, 3 minced
2 ribs celery, 1 halved, 1 diced
2 carrots, 1 halved, 1 diced
1 tsp. dried thyme
6 c. water
1 tsp. Kosher salt plus more to finish
2 slices bacon, diced
1/2 bunch lacinato (Tuscan) kale, ribs removed, sliced thin
1 large sweet potato, peeled & diced
1/4 tsp. freshly grated nutmeg

1 large garden-ripe tomato, diced
freshly ground black pepper
freshly grated Parmesan cheese

Make the broth:
Preheat oven to 250 degrees F.

Heat a Dutch oven or casserole with a tight fitting lid over medium high heat. Add the bacon fat or oil and when hot, add the chicken and brown it thoroughly all over. Remove chicken to a plate and set aside.

Turn heat to down to medium and add the coarsely chopped onion, 3 cloves of smashed garlic, 1 halved rib of celery, 1 halved carrot, and thyme. Stir around for a few minutes, then slowly add the water and 1 tsp. of salt. Nestle the chicken back into the pot and bring stock to a simmer. Cover and transfer to the oven. (Or, turn heat to low and simmer on top of the stove.)

Bake (or simmer) chicken for 1 1/2 hours, or until chicken is very tender. Remove chicken from the pot to a cutting board (it might break apart into pieces, which is fine) and let cool for a bit.

Strain stock through a colander into a large bowl. Skim fat from stock. Discard strained vegetables.

Make the soup:
Set the Dutch oven over medium heat and add the bacon to the pan. When the bacon is browned and crisp, add the diced onion, diced garlic, diced celery, diced carrot, kale, sweet potato, and nutmeg. Saute for about 10 minutes, stirring a few times, until the onion is softened. Pour in the stock and simmer, uncovered, for 10 minutes or until the carrot and sweet potato are tender.

While the soup simmers, tear the chicken into bite-sized pieces, discarding the skin and bones.

To serve, stir about half of the chicken into the hot soup (reserving the rest for another use) and taste for salt, adding more if necessary. Divide the diced tomato among soup bowls, ladle soup over the tomatoes, top with black pepper and Parmesan cheese, and serve.

Braised Pork Shoulder with Chiles & Cinnamon

In my excitement to braise something, anything over the past freezing weekend, I got a little carried away and bought an 8-pound boneless pork shoulder...

...for four people, one of whom (Nathan) is hardly ever home and one of whom (my mom) has barely an appetite.

But guess what? It's almost gone! I cut the roast in two, braised half, and grilled the other half long and slow. I served the braised half to our friend Marty, as well as Stacey and Cooper, for family dinner on Sunday night. I sliced the other half and gave some to Stacey, and made sandwiches for Mom and Nathan, and then nachos for Nathan, and about 50 snacks for myself...

And just like that, we'll finish off the last bit in some sort of hash tonight.

What am I trying to say? That I'm excessive in oh so many ways? No, although of course that's true. My point is that the versatility of braised meat is just endless! Braise on Sunday, with very little effort, and have several easy meals all week. It's cheap, delicious, and damn good fun.

The pic up top is the braised version, on polenta, with tomato jam, and finished with bits of crispy guanciale (cured pork jowl) gifted to me by my friend Joy Summers. She visited Mom and me last week and brought me the guanciale plus a pound of Hope Creamery butter. There is love.

Anyhow, the pork-polenta dish, inspired by my friend Molly Herrmann's stunning dish at the Tour de Farm Chicknic in July, blew minds all over this house.

Round II goes to the tacos. Crisp pork in a skillet, in its own fat (not exactly carnitas, but same effect, as in kill-me good), wrap in warm corn tortillas with your favorite taco garnishes. Yah.
