Oh that looks delicious! I haven't been able to find any arugula at my market (too much frost in California) but once I spot some, I will have to try this! AMAZING!!!

I imagine egg salad is not the easiest food to photograph well, so I wanted to let you know you did a great job! It looks so fresh I can almost taste it, and the drips of sauce are a great
touch. I'll have to give this a try without the bacon (I only eat seafood) sometime 
.

That's funny, I was just dreaming about summer BLTs yesterday when I was frying up some Nueskes bacon. Your sandwich looks like decadent and delicious comfort food, thanks for the idea!
